This is a slight variation on a classic summer gazpacho. Because I am lucky enough to live near several chalk rivers, and do like my fishing, I am always picking handfuls of gorgeous peppery watercress. The fiery watercress adds that something that I think Gazpacho is often missing. Make sure you serve it really cold, with little bowls of chopped cucumber and pepper, and maybe a chopped up red chilli if you are feeling adventurous.
Without doubt my favourite place for seafood is the French mediterannean coast. When I lived in Chamonix in the French Alps, whenever the weather got too miserable a crowd of us would pile into my old LandRover and drive the 6 hours to the coast. Even in the depths of winter, as soon as we came within 50 miles of the coast the hot provencal sun would burn through and our spirits would lift. This is a recipe I always used to make after our first trip to the market. If you are going for the authentic recipe then use Red mullet or Gurnard instead of Cod.
